Glenfarclas Family Casks 1954: A rich amber color and elegantly oxidized notes greet you. There are luscious old fruits—pineapple, dried peach, apricot—and puffs of coal-like smokiness. In time, sweet spices (cumin especially) emerge. Superbly balanced. The palate, while fragile, still has real sweetness alongside a lick of treacle. It can take a drop of water, allowing richer, darker fruits to emerge. The finish is powerful, long, and resonant. Glenfarclas distillery

History

Glenfarclas is one of the oldest family-owned whisky producers in Scotland. The history of this distillery stretches back to 1791, even though it was first granted a license in 1836. It was bought by cattle breeder John Grant in 1865, whose descendants still run the business it today. The malt has been used for blending, but the distillery became best known for its single malts. In 2007, Glenfarclas launched The Family Casks collection, releasing limited edition bottlings of all its vintages from 1952 onwards. It proved so popular among whisky lovers that the distillery no longer has any stock from the years 1952 and 1953.

Technology

The distinctive taste of Glenfarcas single malts comes from the family’s experience of 150 years. Relying on traditional distillation methods, they use local water sources that bubble along the granite rocks and direct fired stills. John Grant personally sources the finest European oak casks from a family run bodega in Spain that were previously used to mature fine Olorosso sherry. No artificial colours are used.

Speyside

Speyside is a region in the north-eastern of the corner of Scotland, famed for producing the finest whiskies in the world. Named after the river Spey, the remote area with its soft, pure water sources make it perfect for whisky production. Local distilleries such as Glenfarcas use this water as part of its processes, which contributes to the sweeter, lighter quality of this area’s whiskies. The Spey is also renowned for salmon-fishing — a food that compliments the single malts produced here.

With so many Speyside distilleries, the whiskey produced here is varied. However, Speyside whisky is generally characterised by complexity, fruitiness and honeyed notes, with just a hint of peat.
