The 2005 from Cheval Blanc is a quintessentially elegant, beautiful, deep bluish/ruby-colored wine from St.-Emilion, with raspberry, blueberry, and floral notes, impressive density, great precision, freshness and purity. Full-bodied, but extremely light on its feet, I don’t mean to gush, but it is super-intense, rich and just so meticulously crafted! This is another fabulous wine and a perfect expression for this vintage. It is difficult to forget the gorgeous blueberry and raspberry fruit, full body, sweet tannin, a multi-layered texture, and purity and palate presence of this stunning wine. Drink it over the next 20 years. P.S. In 2005, this was 50% Cabernet Franc and 50% Merlot. (Reviewed by Robert M. Parker, Jr.)

Subtle, complex, alluring aromatics. The palate is exceptionally smooth, ripe and intense with blackcurrant fruit, full and fleshy, lifted with freshness and with very fine tannin running through. Glorious! A very dry year, warm but without 2003’s heatwave, creating small berries, with a concentration of tannin, acid, colour delivering.

This is starting to awaken, with mulled spice, warm cocoa, freshly plowed loam and steeped black currant fruit aromas and flavors emerging slowly but steadily. Chateau Cheval Blanc

History

Wines have been grown in the Cheval Blanc as far back as the 15th century. The most prestigious part of its history started in 1832, when Jean-Jacques Ducasse purchased the estate. It received its first medal at the 1862 Universal Exhibition in London, followed by another in Paris in 1878, and yet another in Antwerp in 1886, making it an internationally renowned estate. However its biggest success was obtaining the classification of Premier Grand Cru Classé “A” in 1954, the highest distinction in the classification of Saint-Emilion wines. Today, Château Cheval Blanc is one of the most respected estates in Bordeaux.

Technology

Chateau Cheval Blanc relies on classical ways of winemaking, and this starts with paying close attention to the vines. Once the grapes are harvested by experienced pickers, they are carefully sorted through once more. Any grapes that do not meet the high quality standards are rejected. Overall, less than 5% of the grapes are left whole, and less than 5% are crushed. Fermentation is overseen by the cellarmaster, and the liquid is then transferred to barrels. Every vintage is aged in French oak from the forests of Tronçais.

Saint- Émilion

Situated on the right bank of Bordeaux, Saint-Emilion has a deep history that stretches back to Roman times. Today it covers more than 5000 Ha, with a significant part of the Saint-Emilion Grand Cru AOC. Compared to the left bank, most properties are smaller in size; the average vineyard is 7 ha. The terroir of Saint-Emilion varies from one chateau to the next and has three distinct parts; the limestone plateau, the slopes closest to the plateau, and the flats.

Château Cheval Blanc has a unique terroir that features alluvia from the Quaternary Period. Its soil formation does not include limestone, and uniquely, the proportion of gravel and clay is about equal. This fortune of nature plays a key part in shaping the estate’s exceptional wines.
